This comes down to what else do you want to keep in the tank. If that's all you want 3 or 3 would be fine, but if you want other fish, more anemones make a fish blundering into them far more likely.
To keep things on the safe side, I'd say stick to one large anemone, and consider some zoas, rock anemones or mushrooms if you want more anemones.
