I'm one of the least experienced people here, but I don't think I'd do deli shrimp if I was doing the reef mature pro kit. Just going by what Roy Page told me, that kit is very specific step by step and I don't think I'd do anything to mess with it. It seemed to provide plenty of material all its own without the shrimp adding to it.
Of course, if someone like one of our experienced hands around here says different, listen to them.
