I've always had great experiences with Pacific East Aquaculture. That rock looks terrific! Aquascaping looks nice and cavey.

ok so heres the first test data... exactly 24 hours after the setup.

cycling with live rock and deli shrimp.

PH 7.8
AMMONIA 2
Nitrite .75
Nitrate 0

When using the deli shrimp to start the cycle it usually takes a couple of days for the shrimp to decompose and introduce ammonia.
The cycle probably started right away because most of the sponge will die due to exposure to air. It probably started dying during shipping being wrapped in wet newspaper only.

For my tanks, it was usually a few days before the die off started to generate readings on the tests.

All LR is different though. It's great that you're getting readings like that already. Hopefully the cycle won't take "forever" for you.
