I have a 120g tank and a 52g sump/refugium. The evaporation occurs in the sump so the water level in the tank stays constant. Lots of people put their skimmer and other equipment in the sump so the tank doesn't have things hanging all over it.

And yes, adding water volume to your system tends to slow things down a bit. If things start to go bad, they go bad a little more slowly and it gives you more of a chance to correct it before really bad things happen.
