In an aquarium setting (not home aquarium but Commercial) who do you think would win out if both were about equal size:

A) Shark
B) Octopus

it would be the octopus normally however if the shark was a vicious shark ie Tiger Great White. Macko then the tables would be turned

Kim that very well could be a contributing factor. I don't know this for sure (little.. well NO shark experience) but if it's like many other predators the muscles in the jaws are for CRUSHING and it takes very little pressure to keep them shut. that's like "The Crocodile Hunter" keeping a HUGE crocs mouth shut with electrical tape. could be a factor there too...

Al, in the Crocodillian family it's the maxilla (upper jaw) that is the moveable part of the articulation and the mandible is fixed. This is in opposition to most other animals where the mandible is the moveable portion of the articulation between the two jaws. This is why an alligator wrestler can sit on the back of an alligator and hold its mouth shut. They always have the maxillia fully extended, head pulled back, and merely hold the mandible against it with two hands. This would be equivilent to someone pushing your head forward far enough that your mandible was up against your chest. You wouldn't be able to open your mouth.

With sharks and crocodillians, their jaws are controlled more by a fast twitch muscle. In other words, the muscle is stimulated and it quickly contracts to snaps shut the jaws in a linear fashion. They don't have fine control over their articulated jaw. They don't crush as much as perforate and serrate (thrashing back and forth in sharks and rolling in crocs) which is more about the shape of their teeth. Crushing is more of a higher mammalian trait which have large, broad molars with hefty root configurations and finely tuned muscles for mastication.
