Are you shooting raw or jpg? If jpg what parameters are you using? Note that resizing a picture will soften it and you should run at least a mild sharpening on the photo. One thing about the cameras is they are not designed to give you the best out of camera results, the manufacturers figure if your going to spen that kind of money you want to be involved in the complete process to include tweaking in photoshop. Not to say you can't get awesome results straight out of the camera, but you'd be suprised at what a bit of polishing in Photoshop will do to the images.

Ok, I was just trying to determine if there were any tips I could give you, and I figured Travis, whose owned one longer than I have, might also jump in with a few pointers, but I totally understand being overwhelmed by all the options. I'll be happy to try and answer any questions you have, when you have them, as will others here, I'm sure.

Hmmm, that's odd...I wonder why your losing pixels??? My images are 3520 X 2346.

Not sure where the pixels are going. I'll assume you're using the Canon software to convert the RAW images. It's actually a really nice package, does a good job. Try the "faithful" setting in one of the drop-downs (I forget which one) it usually nails the color pretty well.

For white balance, it takes some practice to dial it in after the fact. One thing you can do is use a white area in the photo as a reference point (if you have one).

Some constructive criticism - I know the camera is new to you, just a pointer- USE your depth of field preview! You're not getting enough DOF on most of those, that's the main issue I see. What mode are you shooting in? I would recommend getting used to AV mode.
