Chevrons and grazing

Anyone have experience with chevrons or maybe the close relative the kole? When chevrons are first introduced to a tank its a great sign when they start grazing like mad on the live rock and the glass.

Question is, is the algae on the rock and the glass enough to sustain it? The chevron doesnt go near the flakes or plankton or even the Nori. - its as if he doesnt realize its food that he should eat.

Do these fish eventually learn the behavior to eat OR due to the anatomical structure of their mouth, they are just meant to "graze"?
