Snails=1 per 3 to 5 gallons. Keep a variety that do different jobs.
Crabs? Some love em, some hate them. Dr. Shimek recommends that hermit crabs are only reefsafe in concentrations of less than 1 per 10 gallons. Personally, I think they are suspect but if you want them, use the scarlet legged variety with the yellow eyestalks.
