Let the skimmer skim... and skim.. and skim... and skim.... it is doing its job. It will calm down in a few days. Install an overflow on the skimmer's collection cup then it can drain into a large container (mine drains into a gallon jug). Keep a check on your salinity when the skimmer goes nuts like that...
