Depends on how "live" that rock was, I seen rock which was an instant cycle due to the amount and diversity of the "life".
I would have thought you would see ammonia at zero, nitrite at zero and some ppm of Nitrate. At this point, you have just enough bacteria to zero out the toxic ammonia and nitrites, and leave non toxic nitrates, which expels itself out of the water through surface movement.
You will be continuously adding "ammonia" sources, if done slowly, you grow enough bacteria to process the that load, then again....and so on keeping a balance of nutrients.
I keep Nitrates at 2-5ppm and phosphates at 0.03-0.07
